I was getting a bit sick of Meat and Salad for lunches so decided to do some experimenting.
I came up with some yummy frittatas...
Ingredients
6 Eggs
1/2 an Onion - diced
50grams Ham (or you can use Bacon, smoked salmon, chicken - any meat really)
1 TBSP Ricotta
1/2 Cup Chopped Broccoli
1/2 Cup Chopped Mushrooms
1/2 Beans chopped (or you can use peas)
1 Tomato diced
1 tsp Minced Garlic (use less if you're not a fan of garlic)
1/4 light cheese - grated
Herbs to taste + Salt and Pepper
Method
Blend together Eggs, Garlic and Ricotta
Spray a skillet pan with oil and fry onion and ham until onion is soft and clear.
Add other vegetables, herbs of your choice, salt and pepper and fry until soft(ish)
Make sure they are evenly spread over the skillet and pour over Egg mixture. Cook until the edges of the mixture start to harden and pull away from skillet (approx 6-10mins).
sprinkle over the grated cheese and place pan under a grill to finish cooking and brown. Can take approx 6 mins.
Take out - Cut into 6 slices and serve
