    Cauliflower & Bacon Soup Empty Cauliflower & Bacon Soup

    With this freezing cold weather upon us (at least in Melbourne anyway), I thought some of you might like a yummy BT-compliant soup recipe. My mum used to make it for me when I lived at home and after asking her for the recipe the other day I confirmed it was BT-compliant and made it for dinner last night. It was very easy and turned out just as nice as when she used to make it. Hope you guys enjoy it!

    Cauliflower & Bacon Soup

    Ingredients:

    1/2 large cauliflower
    3 bacon rashers, diced
    1 medium sized onion, finely chopped
    4 cups of water
    2 small chicken stock cubes- crumbled
    1/4 cup cream
    2 tablespoons fresh parsley- chopped

    Method:

    Cut cauliflower into florets.

    Combine bacon and onion in large saucepan, cook, stirring until onion is soft.

    Add cauliflower, water and stock cubes, bring to boil, reduce heat, simmer covered for approximately 20 minutes (or until cauliflower is soft).

    Process mixture in batches until smooth. Return soup to saucepan, bring to boil, reduce heat and add cream and parsley.

    Reheat soup stirring constantly without allowing to boil.
