    Yummy breakfast for PO days

    I came up with this recipe this morning as I wanted something quick and easy and a bit different to the usual fried eggs and bacon on PO days. It turned out very yummy so I thought I would share.

    Turkey Scrambled Eggs

    Ingredients:

    2 eggs
    25-50g sliced turkey breast, chopped into small pieces (the amount you use will depend on if you are male or female)
    2 tbs cream cheese (Philly or similar)
    2 tbs grated parmesan cheese
    2 tbs water
    Sea salt (to taste)

    Method:

    In a microwave safe bowl, whisk up the two eggs. Add the turkey, cheeses and water and mix together.
    Microwave on high for 1 minute, then stir to scramble everything up. Microwave for a further 1 minute, and stir again. Mine was cooked by this stage, but you can nuke it further if needed.
    Sprinkle over some sea salt and enjoy!

    N.B: I know the two eggs plus the turkey and cheeses puts this slightly over the recommended protein amount for females, but this recipe wouldn't work with only one egg. I actually used 50g of turkey myself even though I'm female because I know it won't affect my weight loss and I don't consider it a big deal to go over the 100g serving size occasionally. But personal preference will dictate what you want to do, if you are really concerned you could try it with one egg and 50g of turkey, but I really don't think it would turn out very well. So "don't sweat the small stuff"!
